This is bacon wrapped around a chicken breast that has been stuffed with goat cheese, oven-dried tomato and green onion.
We served it hot with broccoli and bread.
The next time we had this, I took a few photos of the preparation... after pounding the chicken breasts flat (using a wine bottle), T spread creamy goatcheese, basil pesto and capers. He then rolled them up and wrapped each with bacon, overlapping the bacon. He then wrapped it tightly in plastic and refrigerated it for a couple of hours before grilling it on the barbecue.
Here it is served hot with potato salad. One of the logs is plenty for two. So we put the other log in the fridge and it was also wonderful served cold with corn on the cob and left-over potato salad. Both ways are fantastic. The cold version is perfect for a hot summer night.(scroll up for more photos)
